The evening’s menu highlights holiday flavors and seasonal ingredients, beginning with an Ora King salmon gravlax. Made with luxurious beet-cured salmon balanced with the acidity of crisp Granny Smith apples and topped with a refreshing dollop of dill crème fraîche, all atop a delicate lavash cracker. This festive starter is complemented by a 2021 Limestone Chardonnay, a bright, citrus-forward wine, that perfectly balances the richness of the gravlax and sets an elegant tone for the evening.
Following the appetizer, guests will be treated to a vibrant winter salad made with cumin roasted persimmon, adding a subtly spiced twist to the season's produce. Enhanced by the savory crunch of crisp prosciutto and a zesty vinaigrette, each bite delivers a refreshing burst of flavor. The second course is paired perfectly with a 2021 Bricoleur Pinot Noir, a smooth and layered wine with rich flavors of cranberry and a lasting finish.
For the entrée, a show stopping beef Wellington takes center stage, offering a holiday twist on a classic favorite. This tender, high-quality beef cut is wrapped in golden pastry with a layer of seared foie gras, creating complex, savory layers of flavor. The evening concludes with a slice of Bosc pear galette, a warm and comforting dessert featuring caramelized Bosc pears topped with an aged cheddar crumble for a unique, savory twist.
